Would you like to add some pizzazz to your mimosa and get a good dose of beta-carotene? This bright-orange pigment powerhouse is found in apricots. Apricots are not very juicy, so their juice tends to be thicker than most fruit juices.
Enjoy sipping this (tongue-twisting) sunny summer spritzer while relaxing on the patio. You can even juice this drink in bulk and fill your best bowl–your guests will be pleased as punch.

Apricot fruit spritzer
2 cups apricot nectar
1 cup apple juice
1 cup orange juice
2 cups club soda
8 ice cubes
Put the apricot nectar, apple juice, orange juice, club soda, and ice cubes in a large pitcher and stir to combine. Makes 4 medium glasses.
